Salmon Skewers with Lemon Tahini

Fire up the grill for these vibrant Mediterranean-inspired salmon skewers! Marinated in a zesty blend of olive oil, red wine vinegar, honey, oregano, and cumin, the salmon stays juicy and flavorful while getting a beautiful char on the grill. Threaded with lemon wedges for a burst of citrus and served with a drizzle of creamy Lemon Tahini Sauce, this easy weeknight recipe is packed with protein, bright flavors, and a touch of Middle Eastern flair. Perfect for a healthy dinner or summer cookout.

Ingredients:

β€’ 1 lb salmon filet, skin removed

β€’ 1 lemon, cut into thin wedges

β€’ 2 tbsp olive oil

β€’ 1 tbsp red wine vinegar

β€’ 1 tbsp honey

β€’ 1 tsp dried oregano

β€’ 1/2 tsp ground cumin

β€’ Salt and black pepper, to taste

β€’ Wooden skewers, soaked in water for 30 mins

Instructions:

1. To remove the skin: place salmon skin-side down on a board. Run a sharp knife between the flesh and skin, pulling the skin gently as the knife slides.

2. Cut salmon into 1.5-inch cubes.

3. In a bowl, toss salmon cubes with olive oil, vinegar, honey, oregano, cumin, salt, and pepper. Let sit for 15–20 minutes.

4. Thread salmon and lemon wedges onto two parallel skewers per kabob for easier flipping.

5. Preheat grill to medium-high. Brush grates with high-heat oil

6. Grill skewers for 8-10 minutes, flipping halfway, until the salmon is charred at the edges and cooked through.

7. Serve with a drizzle of Lemon Tahini Sauce and a side of salad or rice.
